Apricot and Dijon mustard glazed Salmon

Ingredients

  • 80g apricot jam
  • 1 tbsp Dijon mustard (Maille)
  • 1 tbsp soy sauce (Tiger Tiger)
  • 1 tbsp ginger garlic paste (Tiger Tiger)
  • 400g salmon fillet
  • 1 large potato, peeled and diced
  • 1 tbsp lemon pepper
  • 3 shallots
  • 1 tbsp olive oil
  • 100g frozen broccoli florets
  • 1 tbsp sesame seeds

Method

In a small bowl, mix together the apricot jam, mustard, soy sauce and ginger garlic paste. Cut the salmon into 2 pieces and brush with the apricot glaze. Place onto a baking sheet and grill until cooked and browned for 8-10 minutes. Meanwhile, cook the potato in boiling water till soft and cooked. Add in the lemon pepper, knob of butter and salt and pepper and mash together well. In another pan, sauté the shallots with a drop of olive oil until browned. Add in the broccoli, toss in the sesame seeds and season with salt and pepper. Continue to cook for 2-3 minutes. To serve, spoon the mash onto your serving plates and arrange the broccoli on top. Finish off with the glazed salmon.

Salamun igglejżjat bil-berquq u l-mustarda Dijon

Ingredients

  • 400g flett tas-salamun
  • 80g ġamm tal-berquq
  • mgħarfa mustarda dijon
  • mgħarfa zalza tas-sojja
  • mgħarfa pejst tat-tewm u l-ġinġer
  • patata kbira
  • mgħarfa lemon pepper
  • 100g brokkli tal-friża
  • 3 basal tal-għenieqed (shallots)
  • mgħarfa żerriegħa tal-ġulġlien

Method

Fi skutella żgħira, ħawwad flimkien il-ġamm tal-berquq, il-mustarda, iz-zalza tas-sojja (soy sauce) u l-pejst tat-tewm u l-ġinġer. Qatta’ s-salamun f’2 biċċiet u iksi bil-glaze tal-berquq. Poġġi fuq folja tal-ħami u ixwi sakemm isir għal madwar 8-10 minuti. Sadanittant, sajjar il-patata fl-ilma jagħli sakemm tkun ratba u msajra. Żid il-lemon pepper, il-butir u l-melħ u l-bżar u għaffeġ flimkien sew. F’taġen ieħor, qalli l-basal b’qatra żejt taż-żebbuġa sakemm jismar. Żid il-brokkli, itfa’ ż-żerriegħa tal-ġulġlien u ħawwar bil-melħ u l-bżar. Kompli sajjar għal 2-3 minuti. Biex isservi, poġġi l-maxx fuq il-platti  u rranġa l-brokkli fuq nett. Spiċċa bis-salamun igglejżjat.
