Cranberry chicken thighs with sweet potatoes and corn on the cob

Ingredients

  • 6 chicken thighs, skin and bone on
  • Chicken Soup Mix  (Knorr)
  • 3 tbsp. cranberry sauce (Colman’s)
  • French Dressing
  • 1 packet frozen corn on the cob
  • 1 packet frozen sweet potato cubes
  • 100g fresh cranberries

Method

Mix together the soup mix, cranberry sauce and French dressing to make a marinate. Brush the chicken with the marinate and refrigerate for an hour or overnight. Cover in foil and bake at 200°C for 30 minutes. Uncover and bake for a further 15-20 minutes or until cooked through. Serve with corn on the cob, sweet potato and fresh cranberries.

  • 6 koxox tat-tiġieġ
  • taħlita tas-soppa tat-tiġieġ
  • zalza tal-cranberry
  • dressing Franċiż
  • 2 Corn on the Cob
  • 2 patata ħelwa kbar
  • 100g cranberries

Method

Ħallat flimkien it-taħlita tas-soppa, iz-zalza tal-cranberry u d-dressing Franċiż biex tagħmel l-immarinar. Idlek it-tiġieġ bl-immarinar u poġġi fil-friġġ għal siegħa jew matul il-lejl. Għatti bil-fojl u aħmi fil-forn f’temperatura ta’ 200°C għal 30 minuta. Ikxef u aħmi għal 15-20 minuta oħra jew sakemm ikunu msajra. Servi mal-corn on the cob, patata ħelwa u cranberries friski.
