Lobster and prawn bisque

Serves: 2

Ingredients

  • 1 lobster shell
  • 4 king prawn shells
  • 1 tbsp butter
  • 1 red onion
  • 3 cloves garlic
  • 1 celery stick
  • 1 tsp black peppercorns
  • 2 bay leaves
  • 1 shot brandy
  • 1/2 glass white wine
  • 1 tbsp tomato concentrate (Star)
  • 1 cup fresh cream (Benna)
  • 1 liter fish stock
 

Method

In a pan melt the butter and add the shells, chopped onion, celery, garlic, peppercorns. Sauté on low heat covered without coloring than add the tomato concentrate brandy and flame, add the white wine and keep boiling for one minute than ad the stock, bay leaves and simmer for 45 min, blend well and strain well. Add the cream and simmer until well thickened and serve. Chop the prawn and lobster meat, sauté in garlic butter and serve in the soup.
