Grilled chicken breast on a baby spinach and couscous salad with garlic roasted tomato dressing
Serves: 2
Ingredients
For the chicken
- 400g chicken breast
- 2 tsp mixed spice
- 2 tsp paprika sweet
- 1 tsp honey
You will also need
- 100g raw flavored couscous (Ainsley Harriot)
- 80g feta cheese
- Bunch baby spinach
- 6 cherry tomatoes
- Sun-dried tomatoes (Camel Brand)
- 3 cloves garlic
- 5 tbsp olive oil
- 1 tsp thyme leaves
Method
For the chicken, coat with the spices and honey and grill on a well preheated griddle pan until nicely browned. Cook the couscous as per packet instructions and allow to cool. Crush the feta and mix in the couscous together with the baby spinach leaves. Crush the garlic and place in small roasting tray, add the oil and roast until garlic start to brown. Now add the cherry and sun-dried tomatoes in half’s and place back in oven on grill until tomatoes brown, remove from heat add the thyme and allow to cool.
