Deep fried mozzarella balls with tomato salsa dipping sauce
Serves: 30
Ingredients
- 30 mini mozzarella ball
- 130g breadcrumbs
- 1 tsp dried Italian herbs
- Zest of a lemon
- Salt and pepper
- 4 tbsp seasoned flour
- 2-3 eggs, beaten
- Vegetable oil, for frying
- Tomato salsa for serving
Method
Start this recipe by placing the mozzarella balls on a tray and freeze for an hour for best results. This will help stop the cheese from bleeding whilst cooking. When ready to prepare, mix the breadcrumbs, lemon zest, dried herbs with ½ tsp salt and lots of black pepper. Spread over a plate. Toss the frozen mozzarella balls in the flour, then dip them into the egg and then into the crumbs. Shake off the excess crumbs and repeat the process to coat them twice. When ready to cook, heat the oil in a large, deep frying pan. The oil is hot enough when a few crumbs tipped into it sizzle and turn brown. Fry the mozzarella balls for a few seconds only, until the crumbs are crisp and golden all over. Lift them onto kitchen paper to drain for a minute or two. Serve the warm mozzarella balls with the tomato salsa whilst still hot.

Method
Biex ikollok l-aħjar riżultat ibda billi tpoġġi l-blalen tal-mozzarella f’dixx u ffriżahom għal madwar siegħa. Dan jgħin biex il-ġobon ma jdubx waqt is-sajran. Meta tkun se ssajjar, ħallat flimkien il-frak tal-ħobż, il-qoxra maħkuka tal-lumija, il-ħwawar niexfa, ½ kuċċarina melħ u ħafna bżar. Ferrex it-taħlita fuq platt. Għaddi l-blalen tal-mozzarella mid-dqiq, imbagħad mill-bajd u fl-aħħar mit-taħlita tal-frak tal-ħobż. Farfar il-frak żejjed u erġa’ rrepeti l-proċess biex tkun għaddejthom darbtejn. Imbagħad saħħan iż-żejt f’taġen kbir u fond. Biex tkun taf iż-żejt saħanx biżżejjed, itfa’ ftit frak tal-ħobż u jekk jiħmar u ż-żejt jibda jfexfex, tista’ tibda taqli. Aqli l-blalen għal ftit sekondi biss, sakemm il-frak jieħu lewn dehbi. Erfagħhom miż-żejt u ħallihom joqtru għal minuta jew tnejn fuq karta tal-kċina. Servihom sħan maz-zalza tat-tadam.
