Turkey breast with chestnut, apple and cranberry stuffing
Serves: 4-5
Ingredients
For the turkey stuffing
- 1 tbsp butter and oil
- 1 small onion, finely chopped
- 2 cloves garlic, chopped
- 1 tsp chopped fresh thyme
- 2 tbsp dried cranberries
- 1 apple, grated
- 3 tbsp chopped cooked chestnuts
- Fresh black pepper
- 2 Maltese sausages
- 200g minced pork
- 1 beaten egg
You will also need
- 1kg turkey breast
- 8 slices streaky bacon
- Roasted vegetables and potatoes for serving
Method
Start this recipe by frying the onion, garlic and herbs together for 5 minutes with a tablespoon of olive oil. Remove off the heat. In a medium sized bowl, mix together the pork mince and the Maltese sausage filling. Stir in cooked onion and garlic, cranberries, grated apple, chopped chestnuts and season with salt and pepper. Lay open the turkey breast and lay over the stuffing mixture. Roll up tightly and wrap over the bacon slices. Wrap up in foil and place onto a baking tray. Bake in the oven at 200`c for 30 minutes then remove the foil and continue to cook for 15-20 minutes. Remove from the oven and allow to rest for 5 minutes before cutting up and serving with roasted potatoes and vegetables.

Għall-mili tad-dundjan
- 1 mgħarfa butir jew żejt
- 1 basla żgħira mqattgħa rqiq
- 2 sinniet tewm imqattgħin
- 1 kuċċarina sagħtar frisk imqatta’
- 2 mgħaref cranberries niexfa
- 1 tuffieħa maħkuka
- 3 mgħaref qastan imsajjar imqatta’
- Bżar iswed frisk
- 2 zalzettiet tal-Malti
- 200g kapuljat tal-majjal
- 1 bajda mħabbta
- 1kg sidra tad-dundjan
- 8 biċċiet streaky bacon
- Ħaxix u patata l-forn biex isservi
Method
Qalli l-basal, it-tewm u l-ħwawar għal 5 minuti f’mgħarfa żejt taż-żebbuġa. Itfi n-nar. Fi skutella mdaqqsa, ħallat flimkien il-kapuljat tal-majjal u l-mili taz-zalzett tal-Malti. Itfa’ t-taħlita tal-basal li tkun sajjart, il-cranberries, it-tuffieħa maħkuka u l-biċċiet tal-qastan u ħawwar bil-bżar u l-melħ. Iftaħ is-sidra tad-dundjan u mlieha bit-taħlita. Rambalha tajjeb u dawwarha bil-biċċiet tal-bacon. Imbagħad geżwirha fil-foil u poġġiha f’dixx. Sajjar fil-forn f’temperatura ta’ 200oC għal 30 minuta. Imbagħad neħħi l-foil u kompli sajjar għal 15-20 minuta. Oħroġha u ħalliha toqgħod għal 5 minuti qabel tqattagħha u sserviha bil-patata u l-ħaxix mixwi.
