Traditional Christmas cake

Ingredients
- 200g butter (President unsalted)
- 200g soft brown sugar
- 6 eggs
- 3 tsp black treacle
- 175g plain flour (Lamb Brand)
- 1 tsp salt
- ½ tsp ground nutmeg
- ½ tsp mixed spice
- ½ tsp ground cinnamon
- 100g ground almonds (Lamb Brand)
- 200g currants (Lamb Brand)
- 200g sultanas (Lamb Brand)
- 150g raisins (Lamb Brand)
- 100g mixed peel (Lamb Brand)
- 100g glace cherries (Lamb Brand)
- 200g chopped nuts (Lamb Brand)
- Zest of a small orange and lemon
- 1 bottle of lacto or stout
- 1 tot dark rum
Method
Soak the dried fruits overnight in the orange juice together with the lacto and rum. Cream the butter and sugar until light and fluffy, beat in the treacle. Gradually beat in the eggs, fold in the fruits. Sieve the dry ingredients and fold into the butter mixture. Pour the batter into a greased and lined 20cm cake tin with baking paper. Bake at 140`c for 3 hours, turning occasionally to ensure even cooking.
