Ingredients

  • 500g minced pork
  • 3 onions
  • 4 cloves garlic
  • 100g butter
  • Bay leaves, rosemary, thyme and parsley
  • 200g bacon mince
  • Chicken stock
  • Tubettoni pasta
  • Fresh seasoning
  • Grated cheese
  • Extra butter for finishing
 

Method

Place the onions, garlic, minced meat, herbs, bacon, chicken stock and butter into a large pot. Place on low heat stirring frequently for 15 minutes. Cover and let simmer for approximately 1 ½ hr stirring occasionally. You will know that the sauce is ready because all the liquid and fats rise to the surface. Cook the pasta in plenty of boiling salted water. Drain and transfer back onto the sauce. Beat in butter, chopped parsley and fresh ground black pepper.
