Potato pizza

Ingredients
- 600g peeled potatoes, cut into thin slices
- 6 eggs
- 3 colored peppers, cut into thin slices
- 2 cloves of garlic, crushed
- 1 small onion, finely chopped
- Fresh thyme and parsley
- Fresh seasoning
- 2 grated Grana cheese
- 1 packet soft Italian cheese
- Few slices of Italian sausage
- Rucola salad
- Zucchini slices grilled
- Olive oil
- Toasted pine nuts
- Few sliced cherry tomatatoes
Method
Cook the onion and garlic in a drizzle of oil until soft in a non stick frying pan. Add the potatoes and cook for a few minutes, turning frequently. Season with salt and pepepr, add the bell peppers and cook for a few more minutes. Beat the eggs in a seperate bowl together with the herbs and grana cheese. Stir the beaten eggs in the potato pan, cover with a lid and continue cooking on slow fire.Check the omelete, it should be firm and set. Carefully flip the omelette onto a serving plate, allow to cool slightly. Slice the frittata into wedges and garnish with slices of soft cheese, Sausage, rucola, zucchini, cherry tomatoes and pine nuts. Serve with a drizzle of olive oil and fresh ground black pepper.
