Chocolate brownies

Ingredients

  • 120g plain chocolate, chopped
  • 175g butter or margarine, cut into pieces
  • 400g castor sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • 200g chopped walnuts or pecans
  • 60g dark chocolate chips
  • 120g plain flour

Method

Preheat oven to 175`c. Prepare a 30+22 cm baking tin. In a medium saucepan, over low heat, melt the chocolate and butter until smooth, stirring frequently. Remove from the heat and stir in sugar until well blended. Beat in eggs one at a time, beating well after each addition. Beat in vanilla essence, nuts and/ or chocolate chips. Stir in flour until just combined, batter will be stiff. Spread in the prepared tin. Bake for 30-35 minutes. Do not over bake. Transfer the tin to a wire rack to cool completely.
