Lamb burgers with cream cheese

Ingredients

For the burgers

  • 2 garlic cloves, chopped
  • 4 tsp finely chopped rosemary needles
  • 450g lean lamb mince (150g per burger)
 

To serve

  • Small ciabatta rolls or French bread
  • 25g herbed cream cheese
  • 2 onions, sliced and tossed with 100ml tbsp each balsamic vinegar and olive oil
  • 10g fine sugar
  • Sliced tomatoes
  • Good handful rocket
  • 1/4 chicken cube

Method

Crush the garlic and mix together with rosemary, 1 tsp salt and ½ tsp pepper. Crush with a pestle and mortar to make a paste. Add to the lamb and mix in well with your hands. Don’t overwork the meat or you will toughen it. Divide the mixture into 3, then shape into small round burgers. If eating now, heat a barbecue or grill and cook for about 3-5 minutes, turning frequently, until cooked to your liking. Split the rolls or bread, toast lightly on one side, spread a bit of cream cheese, then add the burgers and the caramelized onions, tomatoes and rocket.
