Spicy beef stir-fry with peppers and cashew nuts
Ingredients
For the spicy coating
- 1 tbsp ground cumin
- 1/2 tsp dried chilli flakes
- 1/4 tsp ground black pepper
- ½ tsp sea salt
- 1 tsp sesame seeds
You will also need
- 500g beef frying steak, thinly sliced into strips
- 2 tbsp vegetable or nut oil
- 1 onion, sliced
- 1 heaped tsp minced garlic (Tiger Tiger)
- 1 heaped tsp minced ginger (Tiger Tiger
- 1 large red pepper, diced
- 1 Knorr beef stockpot (Knorr)
- 2 tbsp dark soy sauce (Tiger Tiger)
- 250ml hot water
- Fresh black pepper
- 2 tbsp fresh coriander, roughly chopped
- 2 spring onions, finely sliced diagonally
- 60g cashew nuts, chopped
- Cooked rice or noodles for serving
Method
Start this recipe by placing the beef strips in a bowl. Add in all the ingredients for the spicy coating and mix well to evenly coat the beef strips. Put aside. In a large pan or wok, heat up the oil and quickly fry the spicy beef strips. Remove them from the pan and add the sliced onions, minced garlic and ginger and sliced red pepper to the pan and stir-fry for 3 minutes. Add the cooked beef strips back into the pan, along with the beef stock pot, soy sauce, 250ml hot water and season with fresh black pepper. Continue to stir-fry for just 1 minute to dissolve the stockpot and create a rich sauce before taking the pan off the heat. Stir in the chopped coriander and spring onions and cashew nuts and serve immediately with rice or noodles.
