Aaron`s Christmas mincemeat
Ingredients
- 250g apples
- 125g butter
- 180g raisins
- 120g sultanas
- 120g currants
- 120g candied peel
- 180g soft dark brown sugar
- Grated zest and juice of lemon and an orange
- 25g chopped almonds
- 2 tsp ground mixed spice
- ¼ tsp ground cinnamon
- Grated fresh nutmeg
- 3 tbsp brandy
Method
Core the apples and chop into small dice. Place in a shallow dish. Mix in all the remaining ingredients except the brandy and blend together with a wooden spoon. Cover the mixture with plastic and refrigerate for 12 hours to allow the flavors to develop. Pre heat the oven temp 120°c and cook the mixture, covered with foil for 3 hours. Remove immediately from the oven dish and transfer into a cool bowl to drop the temperature quickly. Once you have the mixture at room temperature, stir in the brandy. Transfer the mixture into sterilized jars and seal them properly. Store in a cool, dark place.
