Pork loin wrapped in bacon with chilli and coconut sauce

Ingredients

  • 200g pork loin
  • 6 slices streaky bacon
  • 10ml chilli sauce
  • 50ml coconut sauce
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 100ml chicken stock
  • 6 pitted prunes

Method

Start by cutting the pork into strips. Place a pitted prune on each piece and wrap with the bacon. Place on a baking tray and cook in oven for 15 minutes at 160`c. Next, you can prepare the sauce. Sauté the onion and garlic together till golden brown, then gradually add in the chicken stock. Reduce to the right consistency before finally adding in the chilli sauce and coconut milk. Reduce the heat and simmer for 5 minutes before serving with the bacon wrapped pork.
