Stuffed baby chicken with duxelle of apricots, mushroom, Maltese sausage and pork mince

Ingredients

  • 4 baby chickens
  • 300g pork mince
  • 2 Maltese sausages, boiled
  • 100g dried apricots
  • 100g mushrooms
  • 4 large mushrooms
  • 1 tbsp coriander seeds
  • 1 egg
  • 4 rashes bacon
  • Parsley
  • 1 small onion, finely chopped
  • 2 large onions, cut lengthwise
  • 1 tbsp chopped garlic
  • 2 bay leaves
  • 1lt chicken stock
  • 500ml white wine

 

 

Method

Mix the mince, chopped sausage, apricots, chopped mushrooms, onion, coriander, parsley and egg in a bowl. Stuff the chicken from the end and secure the opening with one large mushroom. Wrap in bacon and secure with a skewer if needed. In a pan fry the onion, garlic and bay leaves, add stock and wine. Transfer to an oven proof dish and bake in a pre-heated oven of 180`C for 1hr, basting occasionally.
