Grilled vegetables with mozzarella or fresh gbejna salad

Ingredients

  • 2 medium sized aubergines, cut into 1cm slices
  • 2 large green peppers cut into large slices.
  • 2 marrows or zucchini sliced 1 cm thick.
  • 1 red and yellow bell peppers cut into large slices.
  • 3 large tomatoes sliced 1 cm thick.
  • Bunch fresh basil
  • 4 fresh mozzarella balls or 4 fresh white gbejna

For marinade / dressing

  • Extra virgin olive oil.
  • 2 tsp sugar
  • 2/3 tbsp balsamic vinegar
  • 2 crushed garlic cloves
  • A pinch of chili flakes
  • Salt and pepper

Method

Grill all vegetables on grill plate or grill pan. Make a marinade with a little extra virgin olive oil, balsamic vinegar, garlic and salt and pepper, sugar and fresh basil. When vegetables are ready, brush them slightly with the marinade and set aside, and slice the mozzarella or fresh gbejna. Add chili flakes with the remaining marinade and pass it through a blender. Layer the grilled vegetables, tomatoes, mozzarella and some basil leaves on top of each other to create a tower and serve with balsamic and basil dressing.
