Battered lemon frog legs on a pumpkin and caramelised onion tart
Ingredients
- 6 frog legs
- 1 tsp lemon zest
- 1 tbsp lemon jiuce
- 1 egg
- 1 tbsp flour
- 1 tbsp milk powder (Marvel)
- 1 tsp chopped basil
- Handful rocket leaves
- ½ sheet puff pastry
- 200g pumpkin
- 1 tbsp flour
- 1 tbsp milk powder
- ½ onion
- 1 egg
- 1 tbsp salted butter
- 1 tsp sugar
Method
Mix the lemon zest, basil and jiuce with the frog legs, mix well the eggs, flour, milk powder and dip the frog legs in the mixture, than deep fry. Season with salt and pepper and garnish with rocket. Next, shread the onions and fry in butter and sugar until coloured, and the boiled pumpkin milk powder, flour and egg. Mix well placein a greased small tartlet mould and cover with puff pastry, cook at 220`c until well coloured , allow to rest and serve upside down with the frog legs on top.
