Chicken involtini with mushrooms, goats` cheese and bacon
Ingredients
- 2 chicken breasts
- 100g chopped mushrooms
- 2 cloves garlic
- Chopped parsley
- 1 teaspoon grated parmesan cheese
- 1 goats` cheese (Gbejna)
- 4 slices bacon
- 2 tbsp butter
- 100g cherry tomatoes
- 2 tbsp sultanas
- Fresh seasoning
Method
Split the chicken in halve length wise and bash lightly. Cook the chopped mushrooms with a drop of olive oil together with a clove of garlic. Remove the garlic, season well and add the Parmesan cheese and parsley. Divide the mushrooms on the chicken breast add a slice of goat’s cheese and roll. Wrap the involtini with the bacon, brush with melted butter and bake in a hot oven for 15 minutes in a hot oven. Pour 2 generous spoons of olive oil in a frying pan and cook slowly the cherry tomatoes together with the remaining garlic clove and sultanas. Serve the chicken with a side salad and the comfit cherry tomatoes.
