Salad of roasted peaches, buffalo mozzarella and pine nut dressing

Serves:

Ingredients

  • 2 peaches
  • 4 slices bacon
  • 2 buffalo mozzarella
  • Chopped fresh herbs
  • Crushed fresh pepper
  • Honey
  • Olive oil
  • 2 spoons toasted pine nuts
  • Rocket leaves
  • 1 tsp balsamic vinegar
  • Chopped spring onion

Method

Wash the peaches and cut in halve, remove the stone. Brush the peaches lightly with the honey, sprinkle lightly with the pepper and wrap in bacon. Bake in a moderate oven until bacon is crisp. Roll the mozzarella in the herbs, pepper and spring onion. To make dressing, whisk together a spoon of honey with a spoon of balsamic vinegar and 3 spoons of olive oil; add in the pine nuts. To serve dress the rocket leaves with the dressing and place in the centre of a serving plate. Add the roasted peaches and top up with the marinated mozzarella.
