Almond macaroons

  • 300g caster sugar
  • 300g ground almonds
  • Finely grated zest of 2 lemons
  • 1 tsp vanilla essence
  • 3-4 egg whites
  • 40 whole blanched almonds
  • Rice paper

Method

Start this recipe by heating the oven to 200`c. Place the caster sugar, ground almonds and lemon zest in a food processor and pulse together for 2 minutes. This process will help to make the almond macaroons lighter. Add in the vanilla essence and 3 egg whites and continue to pulse for 30 seconds. The mixture should be of a soft consistency that holds its shape as it needs to be piped. If the mixture is still too stiff, add in half of the remaining egg white and pulse again. Repeat this process if necessary until you have the correct consistency. Do not be tempted to add in the egg whites all at once because if the mixture becomes too soft or runny the macaroons will flatten out during cooking. Place the mixture into a piping bag fitted with a plain nozzle and pipe the macaroons onto baking sheets covered with rice paper. It is important that the macaroons are piped slightly apart from each other so that they cook evenly. Press a whole blanched almond into the top of each macaroon and bake in the oven for approximately 18-20 minutes. The macaroons should be a light golden brown colour with cracks on top. Remove the macaroons from the oven and allow to cool for 5 minutes before removing the excess rice paper. Allow the macaroons to cool down completely before serving.

Ingredients

  • 300g zokkor fin (caster sugar);
  • 300g lewż mitħun;
  • qoxra ta’ 2 lumijiet maħkuka rqiq;
  • kuċċarina essenza tal-vanilla;
  • 3-4 abjad tal-bajd;
  • 40 lewża mqaxxra

Method

Saħħan il-forn għal 200oC. Itħan iz-zokkor, il-lewż mitħun u l-qoxra maħkuka tal-lumi għal 2 minuti. Dan jgħin biex il-pastini jiġu aktar ħfief. Żid l-essenza tal-vanilla u 3 abjad tal-bajd u kompli itħan għal 30 sekonda oħra. It-taħlita għandha tkun magħquda, tant li żżomm l-għamla tagħha meta tiffurmaha. Jekk tkun iebsa żżejjed żid nofs l-abjad tal-bajd li jkun fadal u kompli itħan. Jekk ikun hemm bżonn, irrepeti dal-proċess sakemm it-taħlita jkollha konsistenza tajba. Titfax l-abjad tal-bajd kollu f’daqqa għax jekk it-taħlita tiġi ratba żżejjed il-pastini jiċċattjaw waqt is-sajran. Itfa’ t-taħlita f’piping bag b’tarf normali u fforma l-pastini fuq it-tilari miksija bil-karta tal-ostji. Spazja l-pastini minn xulxin ħalli jinħmew tajjeb. Poġġi lewża fil-wiċċ ta’ kull pastina u aħmi għal madwar 18-20 minuta. Il-pastini jridu jiħmaru ftit u jinqasmu mill-wiċċ. Oħroġhom u ħallihom jibirdu għal 5 minuti. Imbagħad aqla’ l-karta ż-żejda minn magħhom. Ħallihom ikomplu jiksħu sew qabel isservihom.
