Clam stew with celery and leeks

Serves:

Ingredients

  • 2 stalk celery
  • 50g leeks
  • 1 onion
  • 3 cloves garlic
  • Salt and pepper
  • 500g clams
  • 50ml white wine
  • 50ml fish stock
  • 10g butter

 

Method

In a hot pan, cook the finely chopped onions and garlic till golden brown, then add the celery, leeks and butter and sauté for 5 minutes. Add in the clams, stir and cook till they start to open. Finally add the wine and the fish stock to the pan, season well with salt and pepper and serve.
