Oven-baked potato wedges with smoked paprika
Ingredients
- 4 medium sized potatoes, skins on and scrubbed
- 1 tbsp olive oil
- 3 tbsp dried breadcrumbs
- Fresh seasoning
- 1 tsp smoked paprika
Method
Start this recipe by pricking the potatoes all over with a fork. Place them in foil and bake them in the oven for 30 minutes, or till half cooked. Remove them from the oven and allow to cool. Mix together the breadcrumbs and smoked paprika and season well with salt and pepper. Cut the potatoes into wedges and place in a bowl. Drizzle over the olive oil and toss around, greasing the potatoes all over. Next, toss the potatoes in the flavoured breadcrumbs to coat all over then transfer to an oven tray. Bake the wedges in the oven for a further 20-25 minutes until cooked through and golden brown
