Upside down pear and walnut cake

Ingredients

For the cake

  • 50g unsalted butter
  • 75g castor sugar
  • 50g plain flour
  • 2 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • Pinch of salt
  • 1 tsp mixed cinnamon, nutmeg and cloves
  • 1 egg
  • 60g natural yoghurt

You will also need

  • 150g melted butter
  • 100g light brown sugar
  • 3 ripe pears, peeled, halved and cored
  • Few toasted walnuts

 

Method

Start this recipe by preparing the cake tin. Grease a 23 cm cake tin with a little of the melted butter. Pour the remaining melted butter into the bottom of the tin and sprinkle over the light brown sugar. Neatly arrange the pears on the butter sugar mixture and sprinkle over the walnuts. Next, you can begin to prepare the cake batter by beating the butter and sugar together until light and fluffy. Add the egg and mixture and incorporate into the batter. Sift together the flour, baking powder, bicarbonate of soda, salt and spices and carefully fold in, followed by the yogurt. Pour the batter over the pears in the prepared tin and bake in a pre heated oven at 180°c for approximately 40 minutes.
