Beef stroganoff with brandy and thyme

Ingredients
- 1 tbsp olive oil
- 25g butter
- 1 large onion, chopped
- 4 cloves garlic, finely chopped
- 1/2 tsp chopped thyme
- 500g beef fillet, cut into strips
- 1 heaped tsp Dijon mustard
- 1 heaped tsp smoked paprika
- ½ tsp whole pepper corns
- Fresh seasoning
- 1 shot brandy
- 200ml beef stock
- 200g whole button mushrooms or normal mushrooms, sliced
- 200ml cream (Sania)
- 1 tbsp chopped parsley
- Plain boiled rice for serving
Method
Start this recipe by heating the butter and oil together in a large pan. Add the onion, garlic and chopped thyme and sauté for 3-4 minutes to soften. Add the beef strips and seal in the pan for 2 minutes. Add in the Dijon mustard, smoked paprika and pepper corns and season well with salt. Pour over the brandy and allow to bubble for a minute before adding in the beef stock and cream. Add the button or sliced mushrooms, turn down the heat and continue to cook the beef to your liking. This shouldn’t take more than 5 minutes as over cooking will make the meat tough. When you are ready to serve, stir in the chopped parsley and serve the beef stroganoff with the plain boiled rice.

- basla kbira, imqattgħa;
- 4 sinniet tewm, imqattgħin irqiq;
- ½ kuċċarina sagħtar, imqatta’;
- 500g flett taċ-ċanga, imqatta’ fi strixxi;
- kuċċarina mburġata mustarda Dijon;
- kuċċarina mburġata paprika ffumigata;
- ½ kuċċarina bżar sħiħ;
- ħwawar friski;
- grokk brandy;
- 200ml stokk taċ-ċanga;
- 200g faqqiegħ sħiħ żgħir jew faqqiegħ normali, imqatta’;
- 200ml krema (Sania);
- mgħarfa tursin, imqatta’;
- ross mgħolli biex isservi
Method
Ibda r-riċetta billi ssaħħan il-butir u ż-żejt f’taġen kbir. Żid il-basal, it-tewm u s-sagħtar imqatta’ u qallihom għal 3-4 minuti sakemm jirtabu. Żid il-biċċiet taċ-ċanga u ssiġillahom għal 2 minuti. Żid il-mustarda, il-paprika u l-bżar u ħawwar bil-melħ. Żid il-brandy, ħallih ibaqbaq għal minuta imbagħad itfa’ l-istokk u l-krema. Żid il-faqqiegħ, baxxi n-nar u kompli sajjar iċ-ċanga kif tiggostaha. Dan m’għandux jieħu aktar minn 5 minuti għax inkella l-laħam jibbies. Meta tkun se sservi, żid it-tursin u servi l-istroganoff mar-ross mgħolli.
