Salmon and pancetta skewers

Ingredients

  • 3 salmon fillets
  • 1 orange
  • 9 slices pancetta
  • 1 lemon
  • Chopped parsley
  • 3 tbsp olive oil (PREGO)
  • 1 tsp honey
  • Fresh ground pepper
  • 1 tbsp chopped dill

 

Method

Trim the Salmon into neat chunks and season with the pepper. Peel the orange with a potato peeler, put a slice of orange on each salmon bite. Roll the fish pieces with the pancetta and push through a skewer. Next, whisk together the olive oil, lemon juice, honey, parsley, dill and ground pepper. Drizzle the fish with the dressing and bake for 15 minutes in a hot oven.
