Lemon and orange posset
Serves: 4
Ingredients
- 500ml double cream (ELMLEA)
- 125g castor sugar
- 1 vanilla pod
- Juice and rind of an orange
- Juice and rind of a lemon
- Mint leaves to garnish
Method
Scrape the seeds from the vanilla pod place in a saucepan with the sugar and cream. Bring gently to the boil. Remove from the heat and slowly add the zest and juices of the fruits. Leave to cool completely. Pour the orange and lemon cream into glasses and place in the fridge for at least 3 hours before serving. Served with springs of fresh mint and some nice berries.
