Gozitan ftira with broad beans and goat’s cheese

Ingredients
- 500g bread dough
- 2 potatoes, peeled, sliced and blanched
- 2 large onions, peeled, sliced and cooked until soft
- 300g fresh broad beans, peeled
- 2 tomatoes, sliced
- 3 fresh goat’s cheese (CAMEL BRAND)
- 2 cloves garlic, finely chopped
- 2 tbsp chopped parsley
- 2 eggs
- Fresh seasoning
- Drizzle olive oil (PREGO)
- Sesame seeds
Method
Brush a 20cm pizza pan with olive oil and set aside. Now, roll out the bread dough on a lightly floured surface, trying to keep a round shape as much as possible. The dough should be an inch wider than the pizza pan. Carefully roll the dough around the rolling pin and transfer over the baking pan. Press the base with your finger tips and you should have a rim of dough overlapping all around the pan. Next, place the goat’s cheese in a bowl and beat in the eggs, the broad beans, garlic and parsley. Now you can start filling the ‘Ftira’. Arrange the blanched potatoes on the bottom of the ‘Ftira’. Sprinkle over the onions and the tomatoes and pour over the cheese mixture. Once the ‘Ftira’ is filled, start turning the edges of the dough over lapping each other. Brush with olive oil, sprinkle with sesame seeds and bake in a moderate hot oven for approximately 30 minutes.
