Lent bread ring
2012-04-03
Ingredients
- 800g strong or plain flour
- 2 tsp dried yeast
- 60g melted butter
- 1/2 tsp bread improver
- 1/4 tsp salt
- 450ml warm water
- Sesame seeds
- Blanched almonds
Method
Mix together the flour, yeast, salt and bread improver in a food processor, add the melted butter and enough warm water to mix into smooth dough. Put the dough onto a lightly floured surface and continue kneading for a couple of minute until dough is elastic. Put the dough in a covered container in a warm area so that it rises and doubles in bulk. Knock down and allow to rise till double in size again. Next, transfer the proved dough onto a clean surface and roll into the shape of a long bread stick. Join the two ends together to form a ring and place on a baking tray. Brush with water, sprinkle liberally with sesame seeds, press in the almonds and slit with a sharp knife. Allow to rest again until the ring is double in bulk. Bake in a moderate oven until golden. Brush with water once again when you take the bread ring out of the oven.
