Loster salad rolls

Ingredients

  • 12 mini hot dog rolls
  • 200g cooked lobster meat, shredded
  • 1 finely chopped celery stick
  • 1 finely chopped shallot
  • 1 tsp chopped parsley
  • Juice of a lime
  • Few drops tabasco sauce
  • 1 tbsp mayonnaise
  • 1 granny Smith apple

Method

Marinade the lobster meat in a mixing bowl with the celery, shallot, parsley, Tabasco sauce and a pinch of salt. Mix together lightly with a fork, and then stir in the lime juice and enough of the mayonnaise to bind all the ingredients together. Next, split the hot dog rolls length wise and fill with the lobster filling. Decorate with fine strips of apple and serve.
