Scallops wrapped in pancetta

Ingredients
- 12 scallops in shells
- Julienne of stir fried vegetables (mange tout, spring onion, bell pepper, baby corn, garlic, ginger)
- 1 tsp soy sauce (TIGER TIGER)
- 1 tsp honey
- 1 clove garlic, crushed
- 1 tbsp fresh coriander, chopped
- 12 slices pancetta
Method
Take the scallop meat off the shell and remove the orange part. Place the scallops in a small bowl and marinade for an hour with the soy sauce, honey, coriander and garlic. Wrap the marinated scallops with the pancetta and secure with a skewer. Place in a baking tray and grill or shallow fry the scallops until golden. Before serving, spoon some of the vegetables in each shell and lay the scallop wrapped in pancetta on top.
