Sea bass all’ acqua pazza

Ingredients

  • 2 sea bass, filleted
  • 500ml water
  • 1 celery stick, chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • 4 cloves garlic
  • ½ tsp sea salt
  • Freshly ground pepper
  • 3 bay leaves
  • 3 parsley springs
  • Few springs of thyme
  • Olive oil (PREGO)
  • Juice of 2 lemons

Method

Pour the water into a wide deep pan and add the chopped vegetables, herbs and garlic. Bring the ‘acqua pazza’ which literally means crazy water to the boil, lower the temperature and set at a simmering point. Season the fish fillets with the sea salt and fresh pepper. Place the sea bass in the crazy water and simmer for 5 to 6 minutes, until fish is firm. Whisk together the olive oil with the lemon juice, season slightly. Serve the fish in a deep plate, pour some of the crazy water and drizzle with the lemony oil, accompanied with fresh crusty bread. Suggested accompanying wine: DELICATA Medina Sauvignon Blanc D.O.K. Superior Malta
