Chicken and zucchini pasta with gorgonzola and walnuts

Ingredients

  • 1 leek, chopped
  • 3 cloves garlic, crushed
  • 1 tbsp olive oil (PREGO)
  • 15g butter
  • 1 zucchini, chopped
  • 1 chicken breast, thinly sliced
  • 100ml white wine
  • Fresh seasoning
  • 125ml cream (HOPLA LIGHT)
  • 60g gorgonzola cheese (GALBANI)
  • Zest of ½ a lemon
  • 1 tbsp chopped parsley
  • 150g pasta

Method

Start this recipe by putting a pan of salted water on the stove to boil. When the water has begun to boil, add in the pasta, turn down the heat and cook the pasta. Meanwhile, heat the butter and oil together in a large pan and sauté the garlic and leeks together for 2 minutes. Add in the zucchini and cook for 2 more minutes. Add in the chicken slices and brown all over. Continue to cook the chicken for 2 more minutes, before adding the white wine into the pan. Season well with salt and pepper, mix well and reduce the wine. When the chicken is cooked, add the cream, gorgonzola and lemon zest to the pan. Add in the cooked pasta and continue to heat till the cheese has melted and you are left with a rich, creamy sauce. Stir in the chopped parsley and serve the zucchini and chicken farfalle into large pasta plates. Sprinkle the chopped walnuts over the top of the farfalle and serve with a glass of wine.   • mgħarfa żejt taż-żebbuġa (PREGO)
  • 15g butir
  • qargħa bagħlija, imqattgħa
  • sider tat-tiġieġa, imqatta’ fi stixxi rqaq
  • 100ml inbid abjad
  • ħwawar friski
  • 125ml krema (HOPLA LIGHT)
  • 60g ġobon gorgonzola (GALBANI)
  • il-qoxra maħkuka ta’ ½ lumija’
  • mgħarfa tursin, imqatta’
  • 150g għaġin farfalle

Method

Poġġi borma bl-ilma u ftit melħ fuq in-nar u ħalliha tagħli. Wara itfa’ l-għaġin u baxxi n-nar. Sadattant saħħan il-butir u ż-żejt flimkien f’taġen kbir u qalli t-tewm u l-kurrat flimkien għal 2 minuti. Żid il-qarabagħli u sajjar għal 2 minuti oħra. Itfa’ l-biċċiet tat-tiġieġ u sajjar sakemm jiħmaru. Kompli sajjar it-tiġieġ għal 2 minuti oħra, imbagħad itfa’ l-inbid abjad fit-taġen. Ħawwar bil-bżar u l-melħ, ħawwad sew u ħalli l-inbid jinxtorob. Meta t-tiġieġ ikun sar, żid il-krema, il-ġobon u l-qoxra maħkuka ta’ nofs lumija. Żid l-għaġin mgħolli u kompli sajjar sakemm il-ġobon jinħall u z-zalza ssir kremuża. Itfa’ t-tursin, ħawwad u servi l-għaġin fi platti kbar. Ferrex il-ġewż imfarrak fil-wiċċ u servi ma’ tazza nbid bajda.
