Greek walnut and cinnamon cake

Ingredients

  • 1 cup sunflower oil
  • 1 1/4 cup freshly-squeezed orange juice
  • 2 tsp ground cinnamon
  • 1 cup sugar
  • 3 cups self-raising flour, sifted
  • 1 1/2 cups walnuts, finely chopped
  • 1 tsp baking powder, sifted
  • Some icing sugar for sprinkling

Method

Grease a 23cm round cake tin with butter and line with baking paper. Place the oil, orange juice, cinnamon and sugar in a bowl and mix well with a wooden spoon until the sugar dissolves a little. Gradually add the flour, mixing well, then add the walnus followed by the baking powder. Mix well until combined. Pour the mixture into the cake tin, level the top and bake in a moderate to slightly hot oven,160 degrees, for 15 minutes. Lower the heat to 130 degrees for a further 50 minutes or until cooked through. Bring the cake out of the oven, stand for 5 minutes and then remove it from the tin. Place on a wire rack to cool slightly and sprinkle with icing sugar. This cake is ideally served lukewarm. Suggested accompanying wine: DELICATA Grand Vin de Hauteville Moscato D.O.K. Malta Liqueue wine
