Hazelnut and chocolate cookies

Ingredients

  • 190g unsalted butter
  • 190g light soft brown sugar
  • 1 egg
  • 1 tsp baking powder
  • 60g cocoa powder
  • 300g plain flour
  • 100g chocolate chips
  • 100g hazelnuts, roughly chopped

Method

Mix the butter and sugar together in a food processor till soft, then add the egg and pulse for 10 seconds. Add the baking powder, cocoa powder and flour and pulse to form a soft pastry. Remove the pastry, and chill for 30 minutes in the fridge to firm up. Next, form the chilled pastry into small balls, and flatten them down. Mix the chopped hazelnuts and chocolate chips together in a large plate and dip in the flattened pastry balls, pressing down well, to coat the cookies with chocolate chips and nuts. Place the cookies on lined baking sheets, slightly apart, and bake in the oven at 200`c for about 15 minutes. When cooked, remove the chocolate and hazelnut cookies from the oven and leave to cool on a wire rack.

  • 190g butir bla melħ
  • 190g zokkor ismar ċar, artab
  • bajda kuċċarina trab tal-ħami (baking powder)
  • 60g kokotina; 300g dqiq plain
  • 100g frak taċ-ċikkulata
  • 100g ġellewż, imfarrak f’biċċiet kbar

Method

Ħallat flimkien il-butir u z-zokkor f’food processor sakemm jirtabu, imbagħad żid il-bajda u ħabbat għal 10 sekondi. Żid ukoll it-trab tal-ħami, il-kokotina u d-dqiq u ħabbat biex tifforma għaġina ratba. Kessaħ l-għaġina għal nofs siegħa fil-friġġ biex tibbies. Imbagħad ifformaha fi blalen żgħar u ċċattjahom. Ħallat il-ġellewż imfarrak u l-frak taċ-ċikkulata flimkien fi platt kbir u itfa’ l-gallettini f’din it-taħlita biex jinksew. Poġġi l-gallettini fuq tilar miksi, spazjati ftit minn xulxin u aħmihom fil-forn f’temperatura ta’ 200oC għal madwar 15-il minuta. Meta jkunu lesti, oħroġ il-gallettini u ħallihom jiksħu fuq gradilja.
