Tuna fishcakes with mint

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tins tuna
  • 1 large potato, cooked
  • 1 egg, beaten
  • 1 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 3 tbsp breadcrumbs
  • 4 tbsp flour
  • fresh seasoning
  • vegetable oil for frying

Method

Fry the onion and garlic together in some oil till soft, and leave to cool. Drain the oil or brine from the tuna and discard. Place the tuna in a bowl, along with the beaten egg, the cooked onion and garlic and the fresh herbs. Mash the cooked potato, and add to the bowl. Mix all the ingredients together, adding enough of the breadcrumbs to bind the mixture together. Season well with salt and pepper and place the tuna mixture in the fridge for one hour. Meanwhile, place the flour in a bowl and season well. Remove the chilled tuna mixture from the fridge on mould the mixture into small fishcakes using your hands. Roll the fishcakes in the seasoned flour, covering all over. Next, heat the oil in a large frying pan, and shallow fry the fishcakes for roughly 10 minutes, turning around once. When the fishcakes are cooked, they should be golden brown in colour. Serve the tuna fishcakes with mint either hot or cold.

  • 1 basla mqattgħa
  • 2 sinniet tewm imqattgħin
  • 2 laned tonn taż-żejt
  • patata kbira mgħollija
  • 1 bajda mħabbta; 1 mgħarfa tursin imqatta’
  • 1 mgħarfa nagħniegħ imqatta’
  • 3 mgħaref frak tal-ħobż
  • 4 mgħaref dqiq; ħwawar friski
  • żejt veġitali għall-qali

Method

Qalli l-basla u t-tewm fi ftit żejt, sakemm jirtabu. Ħallihom jiksħu. Saffi t-tonn miż-żejt jew mis-salmura tiegħu u itfgħu fi skutella. Għaffeġ il-patata mgħollija u żidha mat-tonn. Żid il-bajda mħabbta, il-basla u t-tewm li tkun qallejt u itfa’ wkoll il-ħwawar friski mqattgħa. Ħallat l-ingredjenti kollha flimkien u żid biżżejjed frak tal-ħobż biex tgħaqqad it-taħlita. Poġġi t-taħlita fil-friġġ għal siegħa. Imbagħad ħawwarha bil-bżar u l-melħ u ffurmaha f’pulpetti żgħar billi tgħaddihom mid-dqiq. Saħħan iż-żejt f’taġen u aqlihom għal madwar 10 minuti. Sajjar il-pulpetti miż-żewġ naħat sakemm jiħmaru. Tista’ sservihom sħan jew kesħin. (għal 4 persuni)
