Lime and chilli prawns on sesame and coriander fried rice

Ingredients

For the prawns

  • 10 king prawns
  • 2 small chilies
  • 1 lime
  • 1 tsp chopped parsley

For the fried rice

  • 2 spring onions
  • 5 baby corn – tinned
  • 50g frozen peas
  • 100g raw long grain rice (Chef way)
  • 4 tbsp sesame oil
  • 1 tbsp chopped coriander
  • 1 tsp black sesame seeds

Method

Peel the king prawns and in a bowl mix with the parsley and chopped chilly. Zest the lime and squeeze the juice and also mix with the prawns, than season well and leave in the fridge. Slice the baby corn and spring onions and in a well preheated pan sauté in 1 tsp sesame oil, add the peas and keep tossing on high heat. Add the rest of the oil cook and well drained rice and toss. Add the coriander seeds and keep tossing until rice is warm enough to serve.
