Cranberry and thyme beef stew

Ingredients
- 500g rib-eye of beef
- 2 tbsp cranberry jam (Ocean Spray)
- 2 tsp thyme leaves
- 1 onion
- 1 small carrot
- 2 cloves garlic
- 3 bay leaves
- 200g mushrooms
- 1 cup beef stock
- 1 glass dark beer
- 1 orange
- 2 tbsp flour
- sweet paprika
Method
Dice the Beef and mix in a bowl with the paprika, flour and orange zest. Preheat a pan and shallow fry the beef in olive oil, remove from the pan and add the peeled and diced vegetables, sauté until browned. Once browned add again the beef, thyme, mushrooms, knob butter stir. Now add the cranberry and squeeze in the orange juice and keep stirring continuously. Pour in the beer and bring to the boil. After simmering the beer for a minute pour in the stock, bay leaves and simmer until stew is cooked and of the right consistency.
