zucchini bread with lemon glazing and poppy seeds

Serves: 10

Ingredients

  • 260g plain flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 2 eggs
  • 120ml olive oil
  • 260g caster sugar
  • Juice and zest of a lemon
  • 125g natural yogurt
  • 240g grated zucchini

For the glaze

  • 130g icing sugar
  • 1 tbsp milk
  • 2 tbsp lemon juice
  • Grated zest of a lemon
  • 1/2 tsp poppy seeds

Method

In a large bowl, beat together the eggs, oil and sugar. Stir in the lemon juice and zest, natural yogurt and grated zucchini. Finally, sift in the flour and baking powder. Tip into the prepared loaf tin and bake for 40-45 minutes at 180`c. Remove from the oven and whilst still warm mix together the icing sugar, milk and lemon juice to make the glaze and pour over the cake. Sprinkle over the poppy seeds and lemon zest and allow to set for 30 minutes before serving.
