Zesty chicken and zucchini salad with sultanas and pinenuts

Ingredients
- 3 tbsp olive oil
- 2 zucchini, sliced
- 2 chicken breasts, each sliced into 2 fillets
- Handful rucola leaves
- 30g sultanas
- 2 tbsp toasted pine nuts
- 2 cloves garlic, finely chopped
- 1 tbsp balsamic vinegar
- Zest & juice of a lemon
- Fresh seasoning
Method
Heat 1 tablespoon of olive oil in a large griddle pan, and cook the sliced zucchini on both sides. Remove them from the pan, and add the chicken fillets. Season with pepper and salt and also cook them on both sides till golden brown. Next, place the rucola leaves, sultanas, pine nuts, chopped garlic, balsamic vinegar, 2 tablespoons of olive oil, lemon juice and zest in a bowl. Season well with salt and pepper, and mix well till you have a nice glossy salad. Arrange the cooked zucchini slices onto 2 serving plates. Place the ruccola salad on top, scattering some of the pine nuts, sultanas and juices around the plate. Finally, place 2 chicken fillets on top of each salad and serve.

Method
Saħħan mgħarfa żejt taż-żebbuġa f’taġen kbir bil-grilja u sajjar il-qarabagħli miż-żewġ naħat. Neħħihom mit-taġen u itfa’ l-biċċiet tat-tiġieġ. Ħawwarhom bil-bżar u l-melħ u sajjarhom miż-żewġ naħat sakemm jiħmaru. Imbagħad, fi skutella poġġi l-weraq tal-aruka, il-passolina, il-prinjol, it-tewm, il-ħall balsamiku, 2 mgħaref żejt taż-żebbuġa, u l-qoxra maħkuka u l-meraq tal-lumija. Ħawwar tajjeb bil-bżar u l-melħ u ħawwad sew biex ikollok insalata tajba. Poġġi l-qarabagħli li tkun sajjart f’żewġ platti li tkun se sservi fihom. Itfa’ l-insalata tal-aruka ma’ ftit prinjol u passolina, u ferrex ftit meraq madwar il-platt. Servi b’biċċtejn tiġieġ fuq l-insalata.
