Warm salad nicoise with poached salmon and mustard dressing

Ingredients
- 8 new potatoes
- 1 shallot, finely chopped
- 1 tbsp chopped parsley
- 2 salmon fillets, skin-on
- 15 string beans
- 2 handfuls rucola leaves
- 6 Quail’s eggs
- Juice of ½ lemon
For the dressing
- 2 tsp whole grain mustard
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Pinch of sugar
- fresh seasoning
Method
Start this recipe by cooking the potatoes. Meanwhile, make the dressing by whisking together the mustard, olive oil, white wine vinegar, sugar and fresh seasoning to taste. Put the dressing to one side. When the potatoes are almost done, start poaching the quails eggs in hot water till cooked. Quickly slice the warm cooked potatoes, and then add the chopped shallot and parsley. Add some of the prepared mustard dressing, mix well, and divide into 2 serving plates. Place a handful of the rucola leaves on top. Remove the shells off the cooked quail’s eggs, and place 3 eggs on to each plate. Meanwhile in a pan of boiling water, poach the salmon fillets till just cooked, and also quickly blanch the string beans. Take the salmon out of the pan, and flake the flesh off the skin. Arrange the blanched string beans around the salad, and place the poached salmon flakes on top. Finally before serving, drizzle the remaining mustard dressing over the salmon. Serve immediately while the salad is still warm.

- 2 kuċċarini mustarda biż-żerriegħa
- 2 mgħaref żejt taż-żebbuġa
- 1 mgħarfa ħall tal-inbid abjad
- niskata zokkor
- ħwawar friski
Method
Għalli l-patata. Sadattant ipprepara t-taħlita għall-wiċċ billi tħallat flimkien il-mustarda, iż-żejt taż-żebbuġa, il-ħall tal-inbid abjad, iz-zokkor u l-ħwawar friski għat-togħma. Poġġi t-taħlita f’ġenb. Meta l-patata tkun kważi saret, għalli sewwa l-bajd tas-summien. Qatta’ l-patata sħuna roti roti u żid il-basla mqattgħa u t-tursin. Żid ftit mit-taħlita tal-mustarda li tkun ippreparajt, ħallat tajjeb u qassam f’żewġ platti. Poġġi ponn weraq tal-aruka fil-wiċċ. Qaxxar il-bajd tas-summien u poġġi 3 bajdiet f’kull platt. Sadattant għalli l-biċċiet tas-salamun fi ftit ilma f’kazzola. Għalli wkoll il-fażola l-ħadra għal ftit ħin. Erfa’ s-salamun, neħħilu l-ġilda u farrku f’biċċiet. Poġġi l-fażola madwar l-insalata u l-biċċiet imfarrka tas-salamun fil-wiċċ.Qabel ma sservi, ferrex it-taħlita tal-mustarda li jkun fadal fuq is-salamun. Servi mill-ewwel sakemm l-insalata tkun għadha sħuna. (għal 2 persuni)
