Vegetarian roasted vegetable and mozzarella roll
Serves:
Ingredients
- 2 red peppers
- 1 aubergine
- 1 onion
- 200g mozzarella (Galbani)
- 1 tbsp chopped fresh rosemary
- 1 roll puff pastry
- 1 egg yolk
- 3 tbsp milk or cream (Benna)
Method
Cut the peppers, onions and aubergines in chunks and toss in a sauté pan on high heat with the fresh rosemary. Once coloured remove from heat and allow to cool, cut the mozzarella into small cubes and mix with the cooked vegetables. Place the pastry on a baking tray than the mix on the pastry and roll closing the ends properly. Wisk well the egg yolk and milk to brush the top with the mix. Bake in a preheated oven for 20 minutes or until the pastry in golden brown.
