Vegetarian pasta with kidney beans and roasted pumpkin

Ingredients

  • 300g cooked pasta (De Cecco)
  • 80g kidney beans
  • 100g pumpkin
  • 50g feta cheese
  • 200g tinned cherry tomatoes (Mutti)
  • 3 cloves garlic
  • 1 tsp thyme leaves
  • bunch baby spinach

Method

Cut the pumpkin in cubes, sprinkle with olive oil season and roast in the oven until browned. Meanwhile chop the garlic and sauté on very low heat, add the kidney beans, thyme, tomatoes and reduce. Add the roasted pumpkin, cooked pasta and toss on low heat. Finish with the crushed feta cheese, spinach and season accordingly.
