Vegan sweet potato and peanut butter brownies

Ingredients

  • 260g cooked mashed sweet potato
  • 25g dark cocoa powder
  • 120g peanut butter (Pip & Nut)
  • 80g maple syrup
  • 1 tsp vanilla extract
  • 100g vegan dark chocolate, chopped

Method

Palace the potato, cocoa, peanut butter, maple syrup and vanilla into a food processor and blitz together. Stir in the chopped chocolate and transfer to a lined baking tin. Bake in the oven at 350°C for 12-15 minutes.
