Vegan Bangers with bean ragout & mash

Ingredients
- 1 packet vegan bangers (Quorn)
- 2 celery sticks
- 2 carrots, peeled and sliced
- 1 leek trimmed and sliced
- 1 teaspoon caraway seeds
- 1 zucchini, diced
- 2 garlic cloves
- 1 tin tomato polpa
- 1 teaspoon dried oregano
- 750ml vegetable stock
- 100g fresh kale, stalks removed and roughly chopped
- 1 tin borlotti beans
- 1 tin cannellini beans
- Juice of a lemon
- Fresh seasoning
- 2 potatoes, cooked and mashed

Method
Set sausages on a roasting tray and bake until crispy in a hot oven.
Heat the oil in a large pan over medium heat. Add the celery leeks and carrots and cook for a couple of minutes, stirring frequently, next stir in the caraway seeds, zucchini, oregano and garlic. Cook for another 5 minutes. Stir in the tomatoes and stock, add in the chopped kale and simmer for approx. 30 minutes till the sauce thickens. Stir in the beans and lemon juice.
Serve the mash potatoes in the centre of a plate and hollow with the back of a spoon.
Fill in with the bean ragout and top up with sliced roasted sausages
