Tuna flatbread pizza with Greek cheese sweetcorn and black olives

Ingredients
For the flatbread
- 300g self raising flour
- 150g Greek yogurt
- 1 tsp baking powder
- Drizzle olive oil
- 2 cloves garlic, finely chopped
- Salt to taste
You will also need
- 2 cans tuna in olive oil, drained (Blue Angel)
- 2 tbsp garlic mayonnaise (Hellmann’s)
- 3 tbsp sweet corn
- 50g sliced black olives (Camel brand)
- 100g Greek cheese block (Emborg)
- ½ red onion, finely sliced
- Micro-greens to decorate

Method
Start with the flatbreads. Place the ingredients into the bowl of an electric mixer fitted with a dough hook and mix into a dough, kneading for a few minutes. Allow to sit for 10-15 minutes before diving into 2 balls. Roll out into 2 large rounds. Heat a pan with a little olive oil and cook the flatbreads for 2 minutes on each side. Meanwhile, make a tuna spread by blitzing together 1 can of tuna with the 2 tbsp of garlic mayonnaise. Spread over the 2 cooked flatbreads. Top with sweetcorn, sliced olives, sliced red onion and chunks of the remaining tin of tuna. Crumble over the Greek cheese and finish off with micro greens.
