Tuna, avocado and chickpea patties with a mango and cucumber salad

Ingredients

  • 200g tinned tuna drained (Blue Angel)
  • 1 avocado, diced
  • 1 shallot, chopped
  • 1 tsp lemon zest
  • 40g chickpeas, drained
  • 80g flour (Lamb brand)
  • 1 mango, sliced
  • 1 small cucumber
  • Small bunch mint leaves
  • Few rocket leaves to garnish

Method

Blend the chickpeas in a food processor, then mix with the tuna, avocado, shallot, zest and seasoning well with salt and pepper. Add in half of the flour and form into patties, toss the patties in flour then shallow fry in hot oil until crispy on the outside.

Slice the cucumber lengthwise with a speed peeler and mix with the sliced mango and fresh mint. Season and serve the patties with the rocket leaves and mango salad.
