Toasted bread with roasted garlic tomatoes, burrata and pesto

Ingredients

You will need

  • 2 thick slices bread
  • 1 whole globe garlic, roasted
  • 15 mixed coloured cherry tomatoes, halved
  • 2 tbsp olive oil (Borges)
  • 2 balls burrata (Zanetti)
  • 2 heaped tbsps pesto 
  • Few basil leaves or micro-greens to garnish

Method

Start with the bread. Drizzle generously with olive oil and season with salt. Toasted in a frying pan on both sides till golden brown. Place onto your serving plates and spread 1 tbsp pesto onto each slice of bread. Place 1 burrata onto each and rip open, spreading over the pesto. Next, place the halved tomatoes in a bowl, squeeze in the puree of the roasted garlic along with 1 tbsp olive oil and salt. Mix together and spoon over the burrata. Decorate with fresh basil leaves or micro-greens and serve immediately.
