Sweet brioche French toast with berries

Ingredients
- 2 eggs (Le Naturelle)
- 1 tbsp sugar (Lamb brand)
- 1 tsp vanilla extract
- 180ml whole milk
- 4 slices thickly cut brioche
- Melted butter for frying (Valio)
- Fresh raspberries and blueberries
- 3-4 tbsp raspberry coulis
- 2 tbsp maple syrup or honey
- 1 tbsp icing sugar for dusting

Method
Start this recipe by whisking together the eggs, sugar, vanilla and milk in a large flat dish. Soak the brioche in the mixture on both sides, melt the butter and fry the dipped brioche for 4 minutes on each side. To serve, place 1 slice of French toast onto serving plates. Arrange berries and coulis on top and drizzle with honey or maple syrup. Cover with another slice of French toast and repeat. Dust with icing sugar and serve.
