Supreme of salmon with creamed leeks with roasted tomato and prawn sauce
Ingredients
- 2 salmon supreme fillets
- 2 leeks
- 100ml cream (Hanini)
- 3 tbsp grated Parmesan cheese (Galbani)
- 5 king prawns
- 6 cherry tomatoes
- 1 tbsp chopped chives
- 2 large potatoes
- ¼ glass sparkling sweet wine
Method
Pan fry the salmon in a little olive oil, add the peeled prawns and finish in the oven together with the cherry tomatoes. Slice the leeks and fry them in a little butter until softened, add the cream and cheese and simmer until its binded. Cut the potatoes into wedges blanch and finish in the oven until lightly browned.Once the salmon is cooked remove from heat add the wine to the small dish add then again in a saute pan and simmer, finish with fresh chives. Serve the potatoes crossed in the middle with the leeks and the salmon on top, drizzle with the sauce.
