Stuffed Pork fillet with feta cheese and walnuts on a caramelized onion tart
Ingredients
- 1 pork fillet
- 100g feta cheese
- 10 walnuts halves
- 6 sundried tomatoes, chopped (Camel Brand)
- 6 slices back bacon
- 3 red onions
- 2 tbsp sugar
- Knob butter
- 1 tsp brown sugar
- 2 slices white French loaf (Golden Harvest)
- 2 cloves garlic
- ½ glass red wine
- 3 leaves sage
- 1 tbsp fresh thyme
- 100g pumpkin
Method
Mix well the chopped sage, sundried tomatoes, walnuts and feta cheese, open Pork fillet lengthwise to make space for the stuffing. Put the stuffing in the middle and close with the bacon, roll in silver foil and cook at 180`c for approximately 25 minutes, or until completely cooked. Melt the butter, shred the onions and cook in butter with the sugar until golden. Clean the pumpkin and cut in thin wedges, sprinkle with brown sugar and roast until golden. Put the onions in a greased ramekin and cut a slice of bread to cover it. Bake until the bread is well browned and remove from the oven. Chop the garlic and cook until browned add the red wine reduce and finally add the fresh thyme.
